Saint-Aubin’s vineyards flourish on limestone slopes, providing an ideal soil for producing white wines of exceptional minerality. The altitude of the vineyard ensures slow, even ripening, preserving the grapes’ freshness and aromatic intensity.
In our Beaune cellars, the grapes are gently pressed before a temperature-controlled fermentation. Careful lees stirring (bâtonnage) further enhances the wine’s texture, imparting both velvety smoothness and depth.

TERROIR & VINIFICATION
Les vignes de Saint-Aubin s’épanouissent sur des coteaux calcaires, offrant un sol idéal pour la production de vins blancs d’une grande minéralité. L’altitude du vignoble favorise une maturation lente et harmonieuse des raisins, préservant ainsi leur fraîcheur et leur intensité aromatique.
Dans nos chais de Beaune, les raisins sont pressés délicatement avant une fermentation sous température contrôlée. Un bâtonnage soigné vient enrichir la texture du vin, lui apportant à la fois velouté et complexité.

FOOD & WINE PAIRINGS
This wine pairs elegantly with firm-fleshed fish and grilled shellfish. It also elevates pan-seared scallops with gentle spices or a fine poultry fillet, highlighting the finesse and generosity of both wine and dish.
Ideal serving temperature: 12 to 14 °C.

TASTING NOTES
This Saint-Aubin white displays a brilliant pale gold hue. The nose reveals a vibrant aromatic palette where the flinty minerality mingles with delicious notes of hazelnut, toasted bread, marzipan, and fresh butter.
