Among Burgundy’s discreet yet remarkable appellations, Saint-Aubin stands out for the quality of its white wines, often likened to those of its illustrious neighbors, Puligny-Montrachet and Chassagne-Montrachet. Nestled in the Côte de Beaune, this vineyard produces elegant and complex wines that reveal the full wealth of its terroir. Among its most renowned “climats,” En Remilly—classified as Premier Cru—offers wines of beautiful tension and great finesse.

TERROIR & VINIFICATION

Saint-Aubin is rooted in marl and limestone soils that give the wine remarkable minerality and structure. The vineyard’s altitude promotes balanced ripeness, preserving the grapes’ natural freshness.

In our Beaune cellars, we practice gentle pressing to preserve the brightness of the fruit. Oak barrel aging brings fine complexity and a silky texture without masking the wine’s vibrant, mineral character.

FOOD & WINE PAIRINGS

This unique wine is a natural match for refined cuisine—it elevates asparagus, poularde with morels, or sole meunière. Its balance of richness and minerality also makes it a perfect partner for scrambled eggs with smoked salmon or poached eggs with truffles.

Ideal serving temperature: 12 to 14 °C.

TASTING NOTES

Brilliant pale gold in color, this Saint-Aubin opens with a crisp, mineral-driven attack, soon followed by a lovely roundness. Aromas of hazelnut and yellow apple blend harmoniously with buttery and toasty notes, delivering a palate that is rich yet balanced. The aromatic persistence is remarkable, leaving a lasting impression of depth and elegance.
