POMMARD

Renowned since the Middle Ages, the Pommard appellation is one of the great names of the Côte de Beaune, producing exclusively red wines that are full-bodied and tannic, made from Pinot Noir. It’s here that the Côte de Beaune takes a slight turn to the southeast, offering ideal conditions for the vine. The argilo-calcareous soils, well-drained thanks to a gravelly layer of rocky debris, give the wine a firm structure and a beautiful longevity.

TERROIR & WINEMAKING

The grapes, hand-harvested and meticulously sorted, are vinified with care in our cellars in Beaune. Aging in oak barrels for 12 to 18 months allows the wine to develop its balance between power and finesse, subtly integrating the oak while respecting the expression of the unique terroir of Pommard.

FOOD & WINE PAIRINGS

This full-bodied and structured wine is perfectly suited to accompany beef fillets, lamb, or game birds in a civet, highlighting their flavors with elegance. On the cheese side, it pairs beautifully with soft-ripened cheeses like Époisses, Langres, and Comté, revealing its full aromatic complexity.

Ideal serving temperature: 16 to 18°C

TASTING NOTES

With a ruby-purple robe and mauve highlights, this Pommard evokes the poetic image of Victor Hugo: “It’s the battle between day and night!” Its expressive nose opens with intense aromas of blackberry, blueberry, cherry, and blackcurrant, accompanied by spicy notes of pepper, chocolate, and cocoa. On the palate, the texture is round and elegant, with a delicate but firm structure. The oak and Pinot Noir are perfectly integrated, offering a refined wine with a beautiful length.
