Two magnificent and intense seasons pass before the grapes reach full maturity, ready to be picked. The harvest traditionally begins around September 15, a key period where know-how and patience are essential.
In Burgundy, balance is crucial: it is about harvesting ripe fruit without excess, in order to preserve beautiful acidity while achieving optimal phenolic maturity. This careful balance ensures refined and harmonious tannins.

The harvest starts at dawn, taking advantage of the morning freshness to preserve the delicate aromas of the fruit. The clusters are carefully picked and transported with care to our cellars in Beaune, where the art of winemaking begins.
In Burgundy, the end of the harvest is marked by lively and joyful traditions. Before savoring the traditional Paulée, a noisy ritual animates the vineyards: after the last cut of the shears, our harvesters celebrate by walking through the vines and streets, honking and singing.
