GIVRY

This village, located in the heart of Côte Chalonnaise, is perhaps one of the most charming due to the uniqueness of its wines, which compensate for their relatively modest production area with exceptional quality. Givry is renowned for its exceptional terroirs, where clay-limestone soils provide ideal conditions for the flourishing of Pinot Noir, the emblematic grape of the appellation.

TERROIR & VINIFICATION

The vineyards benefit from optimal exposure, alternating well-oriented slopes and more temperate plains, allowing for a balanced maturation of the grapes. After manual harvests, the bunches are meticulously sorted to retain only the healthiest and ripest berries.

The vinification begins with fermentation in open tanks, allowing for a delicate extraction of aromas and tannins. The wine is then aged in oak barrels in our cellar in Beaune, where it develops its aromatic complexity and elegant structure.

FOOD & WINE PAIRINGS

Ideal for pairing with roasted poultry, white meats such as rosemary rabbit or a rack of veal with small vegetables, it also pairs perfectly with soft, ripened cheeses. It is best avoided with overly spicy or rich dishes, which may overshadow its elegance and freshness.

Ideal serving temperature: 12 to 14 °C.

TASTING NOTES

This Givry stands out with its bright ruby hue and enticing nose, featuring intense aromas of ripe raspberry and blackcurrant. On the palate, it offers a beautiful vivacity, marked by a hint of wet earth and fine tannins, supported by balanced acidity, which will gain harmony after a year of aging.
