CHABLIS

Located near Auxerre, in the Yonne region, the Chablis vineyard stretches along the Serein River, offering an exceptional terroir for Chardonnay. Its history dates back to Roman times, but it was the Cistercian monks of the 12th century who perfected its cultivation and contributed to its fame. Today, Chablis is world-renowned for its white wines of great purity, combining freshness and minerality.

TERROIR & VINIFICATION

The vines of Chablis flourish on Kimmeridgian soils, rich in marl and marine fossils, which give the wines their unique minerality. Chardonnay, the exclusive grape of the appellation, develops a crystalline and precise expression in this setting. Vinification, often carried out in stainless steel tanks to preserve the fruit’s freshness, results in elegant, finely chiseled wines with superb aromatic finesse.

This wine can be enjoyed as an apéritif or paired with seafood, asparagus, grilled fish, and goat cheeses. Its tension and purity make it an ideal companion for delicate dishes, enhancing every bite with its vibrancy and balance.
